PROJECT MISE EN PLACE
The team behind some of Sydney’s most enduring restaurants, The Apollo, Cho Cho San, and now Olympus Dining, know how to make an impression.
Located in Redfern, Olympus is a grand, open and light-filled room that channels old-world Greek elegance with a modern sensibility.
Known for its 50-year-old bougainvillea that sits in the middle of the restaurant, it’s a venue where you could perch up for a long lunch and easily lose track of time.
While the restaurant feels like it’s already become a Sydney icon, it was less than a year ago the team came by to discuss uniforms ahead of their opening.
While we didn’t know exactly what to expect for the fit out of Olympus, we knew that the level of detail going into the venue was second to none. Down to the water jugs, the team were sourcing the best of the best and we were excited that our workwear was on that list.

PROCESS NOTES
Worktones have a longstanding relationship with The Apollo group and they know our products well. They had always leaned into our stock range, preferring the speed and ease of ready-to-wear options over custom. Their teams are large, and their venues busy, so being able to order quickly and in bulk was key.
Direction for the uniforms was minimal in the early stages, but the team had a strong instinct for what would suit the space.
This project came up around the same time Worktones had launched their Unstructured Blazers, so that was the focus for front-of-house from the get go.
ORDER UP
Olympus front-of-house wear the Navy Unstructured Blazer and matching Nice Pants. Originally, the sommeliers had a completely different uniform,
but over time they’ve switched to the Unstructured Blazer but in the Off-White colour to differentiate the roles. The kitchen staff wear Birdy aprons in off-white.
THE REVIEW
Olympus is a space that every touchpoint has been considered, from the ingredients in each dish, the glass you drink out of, and of course, the 50-year old bougainvillea tree you’re sat under. It was important to us that the uniforms not only be durable and comfortable, but that our team feel confident wearing them. Worktones is a staple in the hospitality world, so it felt only natural to weave some of their pieces into the full Olympus experience.
